Mahalo to TikiFishThursday, August 11th, the Malakye team was invited to attend the TikiFish media tasting by our friends at The HundredsBobby and Ben from The Hundreds partnered on the project with Chefs Wonny Lee, (formerly of Hamasaku) and Ulises Pineda-Alfaro (formerly of Plan Check) to open a chef focused poke and ceviche concept in the west LA Neighborhood of Palms/Culver City. Chefs Wonny Lee, (formerly of Hamasaku) and Ulises Pineda-Alfaro (formerly of Plan Check) are set to open a chef focused poke and ceviche concept in the west LA Neighborhood of Palms/Culver City. Tikifish is another great addition to this ever developing stretch of Overland with neighbors Kogi Taqueria, Phorage, Doughroom, N/Naka, and Scoops all within walking distance. With Chef Lee’s extensive background in Japanese cuisine and sushi, and Chef Ulises experiences growing up with Latin flavors, the two were a perfect pairing for this dual edged market-drvien seafood take on poke and ceviche. Poke and ceviche have their roots within the hearts of the people in their respective origins, and it is the attention to bright flavors and comfort that the two chefs want to accentuate with elevated technique and the use of superior product.

 

The Poke will start with a set of classic menu items with various types of fish and house made sauces.  Patrons will have the option to customize bowls with toppings, and additional premium add ons such as fresh Uni and Crab salad.   There will be rotating options for both ceviche and fresh juices, the latter, which will be made every morning, including the Hawaiian staple “P.O.G”, or (passion fruit- pineapple-orange-guava)

 

Chef Perry Cheung of Phorage is also involved, but takes on a more business development roll for the Tikifish brand and has been available for operational guidance.  The group decided that there needed to be a bold and vibrant mural for the space, so they reached out to international tastemaker Bobby Kim of The Hundreds to come up with something that embodied the fun and whimsical nature of this concept. There was some inherent synergy with the group, and it was a natural progression that Bobby and Ben from the Hundreds became partners on the project, and branding and marketing specialists for the group.  General Manager Ed Refuerzo will be on site daily...mahalo!
