• Hired, trained, and managed up to 35 hosts, bussers, servers and bar tenders in this very high paced 300+ seat resort restaurant/bar/event operation.  This property has 2 bars and 4 dining rooms along with 2 private event rooms.  I was responsible for organizing events, meeting, wedding parties, etc.  Also managed and purchased all liquor and beer.  Special projects included building a craft beer menu comprised of mostly local craft beer and rotating taps.  Also revamped the liquor/wine/beer inventory process which took the monthly project from 2 days to 3 hours.  This increased beer/wine sales by 25% over the prior year.  During peak season Pamlico Jack's serves up to 500 dinners with sales up to 18K per night.
